Roasted Veggie Buddha Bowl

A colourful, nourishing bowl packed with roasted vegetables, chickpeas, and tahini dressing. Meal-prep perfect.

Ingredients

  • 1 cup cooked quinoa or brown rice
  • 1 can chickpeas, drained and dried
  • Sweet potato, courgette, red pepper — all diced
  • 2 tbsp olive oil; salt, pepper, paprika
  • Tahini dressing: 2 tbsp tahini, 1 tbsp lemon juice, 1 tbsp water, 1 garlic clove

Instructions

  1. Toss vegetables and chickpeas with oil and spices. Roast at 200°C / 400°F for 25 minutes.
  2. Whisk tahini dressing ingredients until smooth.
  3. Build bowls: start with grain, add roasted veg and chickpeas, drizzle with dressing.
