Ingredients
- 2 chicken breasts, diced
- 1 tsp olive oil
- 1 tsp dried oregano, garlic powder, salt
- 1 cup cooked rice or quinoa
- Cherry tomatoes, cucumber, red onion, kalamata olives
- Tzatziki sauce to serve
Instructions
- Toss chicken with olive oil and spices. Cook in a hot skillet 6–8 minutes until golden and cooked through.
- Divide rice between bowls. Top with chicken, vegetables, and olives.
- Drizzle generously with tzatziki and serve.
