Easy Avocado Toast with Poached Eggs

Start your morning right with this simple, satisfying avocado toast topped with perfectly poached eggs. Ready in under 10 minutes!

Ingredients

  • 2 slices whole-grain bread, toasted
  • 1 ripe avocado
  • 2 large eggs
  • Salt, black pepper, and red pepper flakes to taste
  • Squeeze of fresh lemon juice

Instructions

  1. Halve the avocado, scoop it into a bowl, and mash with a fork. Season with salt, pepper, and lemon juice.
  2. Bring a small pot of water to a gentle simmer. Add a splash of vinegar. Crack each egg into a cup, then slide into the water. Poach 3–4 minutes.
  3. Spread mashed avocado on toast. Top with poached eggs. Sprinkle with red pepper flakes and serve immediately.
